Korongo (the Swahili word for Flamingo)
We’ve roasted this bean on the lighter side of medium to bring out the delicious fruitiness. Lovely mellow acidity and clean taste with citrus notes and a rich dark chocolate finish, this works really well as a filter, but holds its own and punches well through milk in a flat white or a latte. Honeyed hibiscus notes in the fragrance suggest that the Korongo is going to be a delicate floral coffee, but it's also full-bodied and bright, with flavours of cherry, dried fruits, citrus and rich dark chocolate.
This coffee comes from farms who are receiving incentives and education to help them increase their yields and their incomes through rootstock rejuvenation. Even though farmers are aware that their older trees bear less fruit than younger ones would, when farmers have very small plots of land with only a few hundred trees, it’s difficult to take a tree out of production for the 3 to 4 years it takes a new seedling to bear fruit. For many farmers who depend on income from coffee, it’s better to get a smaller yield from an older tree than no yield at all from a new seedling.
Currently, the average yield for farmers in Tanzania is around 1.5 kilograms of cherry per tree. In contrast, Colombia, for example, the average yield is 3 kilos per tree!
